Charles Oates was a tenacious, recently freed convict when he ventured to the Huon Valley in the mid-eighteen hundreds. It’s his descendants who continue to work the same land today, cultivating acres of apple orchards throughout the valley.
We take this delicious fruit, press and ferment the juice, before twice distilling it in our hand-beaten copper Alembic Charentais still – the same style the Frenchie’s have been using for centuries to make their celebrated Calvados.
